This is my first recipe on the blog so it had to be EASY!! Being honest I’m not a good baker! Last time I tried to do a cake it was a mess, or maybe more like a piece of art because it turned out like the tower of Pisa, but I didn’t want to give up, so as much as I LOOVE banana bread I wanted to give it a try and I can swear that if you are not good at baking you don’t have a chance to mess on this recipe, it’s so easy and the best of all it’s just delicious!
- 3 – 4 ripe bananas
- 1 1/2 cups of all purpose flour
- 1/3 cup melted butter
- 1 cup of brown sugar
- 1 egg, beaten
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda
- pinch of salt
- pinch of cinnamon
And here’s the process. I really like quick recipes and this is one of them, it took me about 25 minutes to have this ready, so if you have all the ingredients gather up this will be a piece of cake, literally!
Preheat the oven to 350°F and linen a 4×8-inch loaf pan, I used parchment paper since I don’t like the mess of the oil, butter and flour on the mold.
Mash the ripe bananas with a fork until it gets smooth. Stir the melted butter into the mashed bananas.
Add the baking soda and salt, then stir the sugar, beaten egg, and vanilla extract.
Then mix in the flour.
Don’t think bad on me, I really didn’t lick that spoon, just being silly… (thanks babe for taking these pictures!)
Pour mixture into loaf pan and bake for 60 to 70 minutes or until a tester inserted into the center comes out clean. You will be so tempted by the smell in the meantime.
It turned out DELICIOUS! the smell was so good and the flavor too, it lasted less than 24 hours in our kitchen, next time I’ll have to do more than one!
You can add raisins, cranberries, walnuts, chocolate chips. I’ll be more creative next time for sure.
I served it warm with a scoop of creamy caramel ice cream. Yep, no words to describe that!
